Azobé is a powerful red wine born from a combination of traditional techniques and modern precision. Partial appassimento of Merlot grapes adds richness, complexity and smoothness, resulting in a wine of great character and balance.

Vinification
Part of the Merlot is hand-harvested and dried for 30 days. The remaining grapes are selected, destemmed and left uncrushed. They are then fermented together with the dried Merlot. After a long maceration, fermentation starts at low temperature and is gradually increased to maximise extraction of colour, aromas and tannins. Repeated délestage and pump-overs enhance complexity and structure.
Ageing
At least 12 months in French oak barrels, followed by a minimum of 6 months in bottle.

Colour: Deep ruby red with violet hues

Aroma: Complex bouquet of ripe red fruits, cinnamon, liquorice and balsamic notes

Palate: Intense and enveloping, ripe fruit balanced by sweet, evolving tannins
Food Pairing
Excellent with braised dishes such as hare stew, roasts and grilled meats. Also enjoyable with dried fruit after dinner.
