Barolo “Baudana” is a historic cru in Serralunga, synthesizing power and depth—truly inimitable.
Origin & Grape
Made from 100% Nebbiolo, massal selection, from our 0.7 ha estate in Serralunga, south-facing, 280 m above sea level. Soil: Elveziano. Vines trained in Guyot style, 5,000 vines per hectare, yield limited to 1 kg per vine through careful cluster thinning.

Vinification
Ripe grapes are hand-harvested in small 20 kg perforated crates and rigorously sorted. Pressing and transport to the cellar occur within a few hours. Fermentation is carried out with indigenous yeasts at controlled temperature (approx. 32 °C) with repeated delicate remontages. Skin maceration lasts 350 hours. The young wine is then transferred to wood for spontaneous malolactic fermentation.
Aging
24 months in oak, followed by 6 months in bottle for refinement.

Food Pairing
Excellent with porcini risotto, lamb, or hard, aged cheeses.
Serving Suggestions
Keep bottle lying down. Serve at 18–20 °C. Excellent for long-term aging – 10–15 years from harvest.
