Barolo “Fossati” captures the power of Barolo and the elegant aromas of La Morra’s vineyards. The last of our cru’s – the cherry on top.
Origin & Grape
Made from 100% Nebbiolo (5 different clones) from our estate vineyards in the Fossati area of La Morra. South-east exposure, approx. 400 m above sea level. Soil: calcareous clay Tortoniano. Vines trained in Guyot style, 5,000 vines per hectare, with yield limited to 1 kg per vine through careful cluster thinning.

Vinification
Fully ripe grapes are hand-harvested in small 20 kg perforated crates and rigorously sorted. Pressing and transport to the cellar within a few hours. Fermentation with indigenous yeasts at controlled temperature (approx. 32 °C) with repeated delicate remontages. Skin maceration lasts an average of 350 hours. Young wine is then transferred to wood for spontaneous malolactic fermentation.
Aging
24 months in oak of various sizes, followed by at least 6 months in bottle.

Food Pairing
Perfect with red meat, game, truffle dishes, blue cheeses, or long-aged cheeses.
Serving Suggestions
Keep bottle lying down. Serve at 18–20 °C. Excellent for long-term aging – 10–15 years from harvest.
