English – Barolo DOCG “Preda” 2021 | Cascina Adelaide

Barolo “Preda” is our true “workhorse”: a Barolo that makes every tasting special. It is the result of careful vineyard selection and meticulous attention from vine to cellar, reflecting the character of its historic terroir.
Origin & Grape
Made from 100% Nebbiolo (2 clones), from our historic Preda vineyard in the Barolo area, southwest facing. Soils are Tortonian. Vines are trained in Guyot style, with an average density of 5,700 vines per hectare. Yield is limited to 1 kg per vine through careful cluster thinning.

Vinification
Hand-harvested grapes are collected in small 20 kg crates and rigorously sorted. Pressing occurs within a few hours of harvest. Fermentation takes place with indigenous yeasts at controlled temperature (approx. 32 °C) with repeated, delicate remontages. Skin maceration lasts an average of 350 hours. The new wine is then transferred to wood, where spontaneous malolactic fermentation occurs.
Aging
24 months in oak, followed by 6 months in bottle for balance and refinement.

Serving Suggestions
Serve at 18–20 °C. Keep bottles lying down. Excellent for long-term aging – 10–15 years from harvest.
