In the Vineyard
Cuvée 1564 Brut Nature is crafted from Chardonnay and Pinot Noir, with 10% Erbamat. The Erbamat grapes grow near the winery on the highest terraces, west-facing and trained with the Guyot system. The 2017 vintage was marked by a historic frost in April, yet vineyards spared from the frost produced a limited quantity of exceptional grapes.
In the Cellar
Grapes are hand-harvested and gently pressed. Each plot is vinified separately in temperature-controlled stainless steel tanks, preventing malolactic fermentation. Chardonnay and part of the Erbamat ferment and age for 7 months in barriques, while the Pinot Noir is vinified as a white wine in stainless steel.

Historical Note
The Erbamat grape was first mentioned by Agostino Gallo in 1564, which gives the wine its name. This Cuvée highlights the origins of the variety, emphasizing its history and the passage of time:
"Albamate, atteso che fanno vin più gentile d’ogni altro bianco: ma perché tardano à maturare, non è perfetto sin’al gran caldo, & più quando ha passato un anno. Ma taccio le altre uve bianche, per havervi ragionato delle migliori."
Pairings
Perfect with sushi, oysters, shellfish, and sashimi, fresh mozzarella and prosciutto, charcuterie boards, baked perch or pike, vegetable casseroles, or veal filet for a more adventurous pairing.
