Origin & Grapes
The grapes, exclusively Dolcetto, come from the estate-owned vineyard in the heart of the prestigious Sorì Costa Fiore in Diano d’Alba. The vines benefit from an ideal southern exposure and grow on Tortonian soils. With a planting density of 5,000 vines per hectare and careful yield reduction, the vineyard produces concentrated fruit of exceptional quality.

Vinification
After a strict selection, the bunches are harvested by hand in 20 kg crates and brought to the cellar within hours. Fermentation takes place at controlled temperature (approx. 32 °C) with 70 hours of maceration, frequent remontages and punch-downs. The wine then undergoes a spontaneous malolactic fermentation, followed by six months of micro-oxygenation to soften the tannins. Ageing: 3–6 months in stainless steel, preserving a pure, fruit-driven style.

Serving suggestion
Serve at 16–18 °C. Excellent with traditional Piedmontese dishes, pasta with rich sauces, white meats and young cheeses. Can age for a few years, but already irresistible in its youthful freshness.
