Elegant and fresh sparkling wine, Charmat-Martinotti method
Producer’s Advice
Recommended as an aperitif and for all convivial occasions. Pairs well with both meat and fish dishes, provided they are not too elaborate. Try it with poké.
Vinification
Sparkling wine made using the Charmat-Martinotti method. Grapes are harvested, destemmed, and gently pressed. The must is carefully clarified. Base wine fermentation takes place at low temperature to preserve freshness and expressiveness. Brief ageing in stainless steel precedes the secondary fermentation in autoclave. Slow refermentation and resting on fine lees for at least 90 days ensure a fine, elegant, and persistent perlage.

Colour: Light straw yellow, bright and brilliant, with a subtle and persistent perlage

Nose: Intense, with notes of white flowers and crisp, slightly underripe green apple

Palate: Intense with pleasant structure and freshness. Slightly mineral, dry finish, enhanced by the reduced sugar content.
