Elegant and refined rosé sparkling wine, Charmat-Martinotti method
Producer’s Advice
Recommended as an aperitif and for all convivial occasions. Pairs well with light dishes, excellent with crudités, sea or lake fish. Delicious also with its Japanese cousin: sushi.
Vinification
Charmat-Martinotti method sparkling wine. The red grapes are harvested, destemmed and gently pressed. Careful cleaning of the must. The obtained must, with a pale pink color, ferments at low temperatures to produce a fine and very fragrant sparkling base wine. Brief refinement in stainless steel tanks before the secondary fermentation in the autoclave. Slow refermentation and rest on the fine lees for at least 90 days, to ensure a fine, elegant and persistent perlage.
