Governo All’Uso Toscano
An ancient Tuscan tradition with modern appeal
In the Vineyard
Governo all’Uso Toscano is an old Tuscan technique used to produce red wines with great fruitiness and easy appeal. The harvest takes place in two steps:

An early selection of the best Sangiovese grapes, which will “govern” the fermented wine.

A second harvest of Sangiovese and Syrah grapes at perfect ripeness.
In the Cellar
The first selection of grapes undergoes drying in special rooms to enhance fruity notes and natural concentration. Meanwhile, the second portion begins alcoholic fermentation, then ages in 30 hl oak barrels, where malolactic fermentation occurs. The selected dried grapes are added to “govern” the wine, enriching it naturally with sugar and triggering a second fermentation until spring. The result is a smooth, fresh, and fruity wine.

The Black Rooster, the Legend *
Following the legend, in the medieval period, when the Republics of Florence and Siena were fighting one another to prevail, the Chianti area was the main point of contention. To end the dispute and establish definitive borders, a very unusual method was chosen. Two knights were to depart from their respective cities and fix the borders at the meeting point, triggered by the crowing of a rooster. The Sienese chose a white rooster, while the Florentines chose a black one. Starved in a small, dark coop for many days, the black rooster crowed hours before sunrise on the fatal morning, allowing the Florentine knight to depart first and claim victory.
