Vinification

Gentle crushing and very soft pressing. Fermentation with selected yeasts at 15°C. Sparkling process with the Charmat Method at the same controlled temperature.

Tasting Notes

• Color: Straw yellow with greenish reflections

• Nose: Intense and elegant, offering delicate sensations of fruit and acacia flowers

• Palate: Fresh, moderately soft and harmonious, with decisive fruity notes and a pleasantly bitter finish

Pairings

For a romantic dinner, after the first toast: enjoy it with scallops on pumpkin and amaretti sauce, or the timeless spaghetti with clams and chili.
For a refined art gallery vernissage: pair it with yellow polenta bites with creamed cod, asparagus risotto with lemon and mint, or squid ink risotto.
