Vinification

The free-run must, obtained by gentle pressing of the grapes, ferments with selected yeasts at a controlled temperature of 15°C. The sparkling process takes place in autoclave using the Charmat Method at 15°C.

Tasting Notes

• Color: Straw yellow

• Perlage: Fine and persistent

• Nose: Fresh and voluptuous with citrus, white peach and quince, followed by hints of rose and fragrant bread crust

• Palate: Extremely balanced, with lively acidity and long persistence

Its softness pairs beautifully with light cooking styles, enhancing the natural flavors of food. Perfect with shellfish, sushi sea bass & tuna tacos, chicken & paprika mini burgers, focaccia with Mortadella di Bologna, and quinoa arancini with garden vegetables and turmeric.
