Salassà Rosso Veronese IGT 2020
A characterful and full-bodied red wine from the hills of Caprino Veronese.
Description
The Salassà Rosso Veronese IGT 2020 is crafted from 80% Corvina, with 5% Rondinella and 15% other local varieties. The grapes are harvested between late September and early October in the vineyards around Caprino Veronese.
After destemming and pressing, about 25–30% of the must is removed to enhance concentration. The grapes are cooled and undergo cold maceration below 10°C for 4 days, after which the temperature naturally rises to 25°C to start fermentation.
Ageing takes place for 12 months in concrete barrels, followed by further refinement in oak barrels and barriques, giving the wine depth and complexity.

Palate: rich and enveloping, with pleasant correspondence between aromas and taste, ending with a refined tannic finish
Food pairing
Excellent with grilled meat and premium cuts such as tomahawk steak, also superb with aged cheeses, or enjoyed on its own.
