In the Vineyard
The clusters are hand-harvested during the last two weeks of September to ensure perfect ripeness. The vineyards lie at 450 meters above sea level, on clay-marl soils derived from fossil-rich calcareous formations (Scaglia Rossa and Biancone), slightly alkaline and rich in character.
The 2021 vintage began with abundant spring rains, followed by a hot and dry summer, allowing the grapes to reach perfect ripeness and giving a harvest of outstanding quality.
In the Cellar
After fermentation, the Valpolicella wine is re-fermented on the freshly pressed Amarone pomace for 15–20 days. This traditional Ripasso method enriches the wine’s body, structure, and aromatic complexity. The wine then ages for 18 months in large 500–1000 L oak barrels, followed by bottle refinement to reach optimal balance and maturity.
