Introduction
Custoza Crea is an Orange Wine produced from a careful selection of the estate’s best white grapes. The result is a structured and long-lived wine of remarkable depth and character.
What is orange wine?
Orange wine is white wine made with extended skin contact, similar to how red wine is made. Because the grape skins remain in contact with the juice during fermentation, the wine develops its characteristic orange colour, added tannin, and a more complex flavour than a typical white wine.
Producer’s Advice
Excellent with grilled fish, white meats such as rabbit, and marbled red meats. Perfect with medium and long-aged cheeses. Highly recommended with Kobe beef dishes.
Vinification
After careful harvesting, the grapes are destemmed and crushed, followed by a short cold maceration of a few days in fermenters. Alcoholic fermentation then takes place at controlled temperature in the presence of the skins, which are gently worked and moistened daily. This skin contact allows a natural transfer of aromas, colour, and tannins, essential for subsequent aging. A portion of the Garganega matures for at least 6 months in amphorae, while the other varieties age in stainless steel on fine lees with bâtonnage. Bottle refinement for a further 6 months.
