Albino Piona – Bardolino DOC
✨ An elegant ruby-red wine with fresh fruit, subtle spiciness and refined tannins.
Producer’s Advice
This Bardolino is a wine for the whole meal par excellence. It pairs naturally with traditional Veronese dishes such as bigoli with donkey stew, risotto with tastasal and tortellini with hare sauce. Excellent with seared carne salada, oven-baked quails with crispy bacon or spit-roasted pigeons. A must-try with a typical Veronese dish: boiled meat with pearà.
Vinification
Careful grape harvesting, followed by destemming and pressing. After a short cold maceration, fermentation takes place at a controlled temperature. First délestage and then pumping over are carried out to obtain a wine with good structure and spiciness. Maturation continues in stainless steel tanks for at least six months before bottling.
