Albino Piona – Bardolino TOA DOC

Introduction
Bardolino TOA is produced from a rigorous selection of the estate’s finest red grapes, with the aim of creating a wine that is rich, refined, and age-worthy. It represents the purest expression of the unique character of the southern Lake Garda hills.
Producer’s Advice
This wine finds a natural match with traditional first courses such as risotto all’isolana and fresh egg pasta like fettuccine with duck ragù. Excellent with cured meats and medium-aged cheeses, as well as white and red meats from the grill. A perfect pairing with grilled asado.
Vinification
The grapes are carefully harvested, with most of them destemmed and pressed, while a small part is vinified whole. After a short cold maceration, fermentation proceeds slowly at a controlled temperature. Both délestage and pumping over are carried out to obtain a fruity wine with elegant tannins. The wine ages for at least 12 months in stainless steel tanks, followed by at least 6 months in the bottle.
