Albino Piona – Campo del Selese (Custoza Superiore) DOC
✨ A structured and refined white wine, born from tradition and terroir.
Introduction
Campo del Selese is the estate’s Custoza Superiore. In peasant tradition, the “selese” was a small terracotta-paved space in the farmyard, exposed to the sun all day, where cereals were dried for winter. The nearby field dedicated to producing this wine was historically called Campo del Selese, a name that remains today.
Producer’s Advice
Excellent with pumpkin tortelli and any dish requiring a structured white wine. Perfect with grilled fish, or boldly paired with a grilled steak. Delicious with truffle-based dishes.
Vinification
After careful harvesting, the grapes are destemmed and softly pressed. The must undergoes cold decantation before alcoholic fermentation at controlled temperature in stainless steel. A portion of Garganega ferments in French oak tonneaux, then blended with the other varieties and aged on fine lees for at least 12 months. Bottle refinement for a minimum of 6 months.
