Producer’s Advice
A wine considered perfect for the whole meal. It naturally complements traditional Veronese dishes such as bigoli with donkey stew, risotto with tastasal, and tortellini with hare ragù. Excellent with seared carne salada, baked quails wrapped in crispy bacon or spit-roasted pigeons. A must-try with the traditional Veronese dish: bollito misto with pearà.
Vinification
The grapes are carefully harvested, destemmed and pressed. After a short cold maceration, fermentation takes place at a controlled temperature. Both délestage and pumping over are carried out to obtain a wine with good structure and spiciness. Maturation continues in stainless steel tanks for at least six months before bottling.

Late September – early October, when the grapes reach full ripeness.
