Albino Piona – Custoza Riserva DOC
Refined and structured blend, oak and bottle-aged for ultimate complexity
Vinification
Careful hand-harvesting of the grapes, which are vinified separately. After destemming and crushing, a soft pressing is carried out. The must undergoes cold decantation, followed by temperature-controlled alcoholic fermentation in stainless steel. The full blend rests on the fine lees for at least 12 months. 50% of the blend ages for 6 months in second-use French oak barrels, before being recombined with the other half. Aged for at least 12 months in bottle.
