In the Vineyard
Made from 100% Sangiovese, this wine is balanced and structured, thanks to optimal climate conditions. Temperature excursions allow the best expression of Sangiovese’s aromatic features. Hand harvest is carefully fragmented according to the perfect maturity of each grape.
In the Cellar
Immediately after harvest, grapes are brought to the cellar. Alcoholic fermentation lasts approximately 30 days to extract maximum color and aroma. This is followed by 12 months aging in barriques, during which the wine gains softness and elegance through tannin maturation. Before release, it undergoes over a year of bottle aging to reach optimal organoleptic maturity.

The Black Rooster, the Legend *
According to legend, in the medieval period, when Florence and Siena were in conflict, the Chianti area was heavily contested. To establish borders, two knights departed from their cities, guided by the crowing of a rooster. The Sienese chose a white rooster, the Florentines a black one. Starved for days in a dark coop, the black rooster crowed hours before sunrise, allowing the Florentine knight to depart first and win the victory.
Pairings
Pairs beautifully with braised red meats, game dishes, barbecue, mature cheeses, cold cuts, and is also excellent as a meditation wine.
