85% Glera, 15% Pinot Noir

Vinification

• Glera: soft pressing with brief cryomaceration

• Pinot Noir: 5-day skin maceration at 20°C

• Fermentation with selected yeasts at 15–16°C

• Blending of wines followed by second fermentation with the Charmat Method at 15°C

Tasting Notes

• Color: Pale pink with a fine and elegant perlage

• Nose: The typical bouquet of Prosecco blends with delicate Pinot notes of raspberry and wild strawberry

• Palate: Fine bubbles caress the palate in a velvety embrace, releasing the fresh fragrance of red fruits

Pairings

For an elegant buffet aperitif: mini burgers with caramelized onion, bacon and avocado cream, or samosas with rhubarb chutney and mint raita.
For a lively, gourmet lunch: wild salmon fillet with wasabi sauce, or tandoori chicken with curried vegetables.
