Description
Canto delle Sirene is our contemporary Spumante, inspired by the enchanting myth of the sirens and the expressive power of Beethoven’s Violin Concerto. A wine that captivates with its brilliance, liveliness, and fresh harmony.
The bouquet reveals fruity notes of apple, peach, and pear, framed by an elegant and persistent perlage. On the palate, it is lively, refined, and creamy, with marked minerality and a long, fresh finish.
Vinification & Aging
Harvest takes place in early September at the perfect balance of sugars and acidity. Grapes are softly pressed, followed by static decantation for must clarification.
Primary fermentation occurs in stainless steel tanks at 14–16°C. The wine then rests on the lees for 2 months before undergoing secondary fermentation in autoclave (Charmat method) with selected yeasts at 15–16°C. Finally, it spends about 30 days on the lees before bottling.
