The Black Rooster, the Legend *
According to legend, in the medieval period, when the Republics of Florence and Siena were in conflict, the Chianti area was the main point of contention. To set definitive borders, an unusual method was chosen: two knights departed from their cities, guided by the crowing of a rooster. The Sienese chose a white rooster, the Florentines a black one. Starved in a small dark coop for many days, the black rooster crowed hours before sunrise, allowing the Florentine knight to depart first and claim victory.
Pairings
Pairs perfectly with first courses, red meats (roasted or braised), and medium-aged cheeses.
