Vinification

Hand-harvested grapes are delicately pressed. Fermentation takes place with selected yeasts at a controlled temperature of 15°C. The sparkling process is carried out using the Charmat Method at low temperatures.

• Color: Bright straw yellow

• Perlage: Fine and persistent

• Nose: Clear aromas of green apple and pear, delicately combined with wisteria and white flowers

• Palate: Firm yet smooth, with excellent freshness

Pairings

With its dry, full flavor, it is the ideal companion for refined dinners. It pairs beautifully with seafood, especially raw delicacies such as red shrimp and oysters. Also a perfect match with sushi, caviar, clams, aged cheeses, and Iberian lardo.
